Chicken Pesto Panini

Here’s another great recipe for a panini made with Liscio’s bread.   It’s quick and easy!

1 loaf Liscio’s flat round loaf
1 chicken breast
2 cups fresh basil leaves
2 small red roma tomatoes
1-2 slices provolone or parmesan cheese
2 garlic cloves
1/4 cup cashews

Cut the chicken breast into thick slices; slice the tomatoes; chop the garlic, and blend it with the basil, cashews and a pinch of salt to make the pesto.   Spread the pesto on one side of each slice of bread, lay the cheese down, then the chicken, and lastly the tomatoes.   Spread some olive oil on a baking sheet, lay the panini on top, cover with another baking sheet, and cook in the oven for about 5-10 minutes.   Serves four.
